What is the most overrated ingredient?
Saffron - just because its scarce does not make it amazing
What is your state of mind when cooking?
Focused on the task at hand
Who are your favorite chefs?
I owe everything to my mentor Chef Neal Fraiser - but celebrity wise I feel Mario Battali earned all his fame he put in his time for sure
What is your favorite dish?
Love Char Sue Pork – that’s the local boy in me
What talent would you most like to have?
Baking - I have great ideas but not the patience
What is your most treasured kitchen tool?
Sounds lame but my induction burner is legit
